Leslie Haley and Susan Yewell had been dreaming and talking over the past few years about working together on another project. They met and became colleagues when Haley hired Yewell to be one of the founding members of the Data Management and Archive Team she was forming during the early stages of NASA's Magellan Mission to Venus. Who would have thought that the working relationship and ultimate friendship begun in 1985 in Pasadena, California at the Jet Propulsion Laboratory would lead to the opening of The Falls Bistro & Wine Cellar in Marble Falls, Texas in June, 2007?
After the completion of the Magellan Project, Yewell received her B.A. in Anthropology from Cal State University, Los Angeles. Twelve years ago she moved to Santa Fe, NM to pursue her interest in archaeology and anthropology through her tour business, as well as her involvement with The Solstice Project.
After 30 years in high-tech management in California, Arizona, and Texas, and receiving awards for her efforts, Haley felt the time was right for a life change in the summer of 2006.
During those early years in Pasadena, Haley developed an interest in one day opening a wine bar, as well as developing a keen interest in wines and food pairings. Yewell has always loved to design interiors and meeting new people, and of course drink good wine and eat delicious food. When Haley pitched the idea of a wine bar in Marble Falls, telling Yewell that she knew it would work because of all the market research and analysis she had done on the area, the die was cast. And she had already found the perfect chef for The Falls Bistro & Wine Cellar, Award-Winning Chef Rafael Garcia, a well-known and highly regarded chef in the Marble Falls area, trained at the Texas Culinary Academy – Le Cordon Bleu.
Haley met Chef Rafael Garcia five years ago when she bought the house that he and his friends were renting. At that time she asked him if she ever opened a restaurant would he be interested in becoming the chef. The answer was an obvious yes.
Yewell moved from Santa Fe in November, 2006 and together with Haley and their contractor, Haley's husband, Rick, began working on the build-out of the restaurant in the 1921 building located at 202 Main Street in Marble Falls. Both Haley and Yewell’s vision of The Falls was to exude a feeling of casual elegance and strived hard to attain that ambience using color, built-in bancos, and bamboo plants all surrounding their comfortable red leather couch. The tables are dressed with white linen tablecloths and napkins, white square china plates, Reidel stemware, substantial flatware by Mikasa, and small square red candleholders.
The beautiful custom wood bar, designed by Rick Haley and Doug Mitchell, with its Texas Pearl granite countertop balances well against the dark purple/black wall which is offset by the other two bluish gray walls. The original beaded wood ceiling is painted white. Black lattice-back chairs are used at both the tables and bar. The look is uncluttered and sophisticated.
Award-Winning Chef Rafael Garcia, of Leon, Guanajuato, Mexico and Marble Falls, created the menu which is focused on tapas, in addition to daily lunch and dinner features, using flavors of Spain, ingredients of interior Mexico prepared using classical French techniques. Austin based Sommelier Nat Davis created the wine list to accompany The Falls' menu. The wines come from smaller estate-bottled wineries in France, Italy, Spain, California, Australia, Argentina, Chile, and Texas. Both The Falls Bistro & Wine Cellar's menu and wine list continue to evolve allowing the restaurant to remain interesting, creative and on the cutting edge.
